The visit begins with a warm welcome in the company shop, where you will then return for the food tasting and, if you wish, to purchase the product. The guide tells you the story of the family, as well as that of Parmigiano, explaining the production process and the traditions surrounding it. Until 9:00 am, you can also see the moment when the wheels are used to lift the wheels from the boilers.
During the visit, you will see the large copper kettles where milk is transformed into curd. It is fascinating to learn how cheese is made and the care with which it is handled.
You can also see the room where the wheels rest for the first three days after production, before being brined for weeks.
Next, you will see the warehouse where the cheeses mature on wooden shelves, called "scalere".
Here, the guide explains the importance of aging and how the cheese develops its unique flavor over time.
The intense smell and the sight of the lined-up Parmesan wheels create an evocative atmosphere, perfect for capturing beautiful memories!
After the visit to the dairy, you can choose whether to go to the barn to see the starting point of our processing, where the milking takes place, what the cows eat, and to see the newborn calves.
Finally, the visit ends with a food tasting of Parmigiano Reggiano at different stages of aging, paired with local wine or balsamic vinegar, with a selection of cured meats and tigelle (crescentine), a typical bread from Modena. It's the perfect time to appreciate the different nuances of flavor and share the experience with other enthusiasts.
